Easy & Health Yoghurt Cake

Ingredients
- 2 large eggs
- 150g granulated sugar
- 200g (2 pots) GA Fat free Peach and Passionfruit yogurt
- 100g vegetable oil, or melted, cooled butter
- 1 tsp vanilla extract
- 2 tsp baking powder
- 1/2 tsp salt
- 200g plain wheat flour
- Powdered sugar for dusting, or passion fruit kernels and apricot jam for a flavourful glaze.
COOKING INSTRUCTIONS
- Preheat the oven to 350F°/180C° / Gas mark 4.
- Grease a 9×5 x 2.5 inch cake tin (or similar size) with butter and cover with bread crumbs, or use baking parchment.
- Mix eggs and sugar until light and fluffy, then add yogurt, oil, lemon zest and vanilla essence. Mix carefully into a smooth consistency.
- Blend flour, baking powder and salt together and add to the wet batter. Mix carefully with a spatula until just combined. A few small lumps in the batter are fine, be sure to not overmix.
- Scrape the batter into the prepared cake tin and smooth the top.
- Bake in the middle of the oven for about 35-40 minutes, until a skewer inserted into the center of the cake comes out clean.
- Remove from the oven and place on a wire rack to cool before handling and cutting.
- Serve plain or dust with icing sugar. Alternatively, make an easy glaze. Warm 3 tbsp of apricot jam gently and add the content of a passion fruit. Brushed the top of the cake.
